I have made the Earl Grey from the Bruce Weinstein Ultimate Ice Cream book, and it was very good but nobody else in my family liked it (they don’t like the tea, either).
I’d love to find a Chai tea ice cream (custard-based) recipe. Mr. SmokeyToes loves green tea, which surprisingly I don’t care much for.
I made one a few years ago but did not like it — I used a good tea, but all I could taste once it was frozen was clove — so I would like to see one too.
Just checked ice cream folder in Evernote, and what I made was this:

But there is not necessarily anything wrong with that recipe, I may just not have liked the tea I used. I have been meaning to try this, because it allows you to control the spices:

I wonder if clove (like oregano and cilantro) is one of those ingredients that some folks are more sensitive to than others?
Could be, although whatever chai that was, I used it because I liked it as a hot tea. So I was wondering if something about using it for ice cream made the clove stand out more than the other spices?

I made something VERY similiar with Thai style tea- I made it vegan though. Soaked the thai tea in soy milk and blended it with coconut milk and brown sugar syrup, with cornstarch added to thicken the mixture like a custard. Let it cool and then processed in the ice cream churner. I served it on a very hot day and it was well recieved!
Those sound like good adjustments. Coconut for creamy texture would work beautifully!
